Restaurant scheduling & labor machine

Gravity Shift Lab

Build the weekly schedule on a time-and-coverage control board. Carry employee profiles, availability, requests and station qualifications from week to week; track hours, closing labor, overtime, labor dollars and coverage by restaurant section.

Shift Lab boundary: this is the weekly scheduling machine. It does not replace payroll, timekeeping, legal scheduling requirements, or Gravity Aware. It helps the manager build and inspect the planned schedule before posting it.

Coverage by Section / Station

Designed to grow later

Shift Lab builds the schedule. Gravity Aware can eventually watch the patterns.

Keep the basic scheduling workflow useful on its own. Later, Gravity Aware can add historical performance, repeated overuse, coverage behavior and other intelligence without turning the schedule builder into a complicated monitoring system.

Employee scheduling rules

Employee

Normal availability repeats every week. Leave blank for any time; use Off for unavailable, or a range such as 4p-close. A recurring day-off request is a standing preference. Date-specific requests automatically stop affecting later schedules after their date passes, but remain in history.

Sections / Stations

Enter the work areas you schedule separately, one per line. These carry forward every week. Employees can have a home section plus additional qualified sections, and any individual shift can be assigned to a different qualified section.

Common examples: Management, Dish Pit, Prep, Cook Line, Pizza, Salad, Expo, Servers, Hosts, Bar.

Closing labor rules

Posted Close + Closing Work

When a shift is entered as 5p-close, Shift Lab counts from 5 PM through the posted closing time plus the after-close work allowance below. Example: posted close 10 PM + 1.5 hours closing work = 11:30 PM for labor and overtime calculations. You can override one shift with 5p-close+2.

Need to create the SOP itself?

Use the Gravity SOP Foundry.

Gravity Shift Lab is the scheduling workspace. The Gravity SOP Foundry is the separate SOP-writing workspace with 525 current controlled source masters—350 published in Volumes 1–2 plus 175 specialty Volume 3 masters—along with blank custom SOPs, pack-wide field carry-forward, revision control, readiness checks, binder building, and self-print output. The Volume 3 book itself remains in development.
