Gravity works best when you solve one real restaurant problem at a time. Use the orientation guide to understand how the pieces fit together, then choose the installation pace your management team can actually sustain: 30-Day Accelerated or 60-Day Guided.

The Gravity installation rule

One real problem. One accountable owner. 3–5 tools. Choose the right pace.

You do not need all 15 systems, all 30 tools inside a system, or every Gravity book before you begin. You do need a pace your managers can execute honestly.

1. Name the pressure

Write the repeated restaurant problem clearly enough that a manager can recognize when it happens.

2. Learn what matters

Use the smallest completed Gravity book or workbook that helps the team understand the practice. In Development titles are never prerequisites.

3. Install the owner system

Choose the operating system that owns the record, decision, and follow-through. Start with only 3–5 tools.

4. Train, pace, and verify

Train before requiring records. Follow the chosen path, close corrective actions with evidence, and use the correct decision gate: Day 30 for Accelerated; Day 30 midpoint plus Day 60 final for Guided.

Choose your installation pace

Same standard. Different implementation path.

The 60-Day Guided plan is not the 30-Day Accelerated plan stretched across twice as many days. Its extra time is deliberately used between major control events for learning, practice, coaching, correction, broader adoption, stress-testing, and verification.

30-Day Accelerated

Concentrated implementation

Best for established managers, reliable records, reasonably stable staffing, and a team that can handle concentrated daily implementation.

  • Days 1–5: Measure + define
  • Days 6–10: Train + pilot
  • Days 11–20: Live execution
  • Days 21–27: Stress-test + correct
  • Days 28–30: Verify + final decision

Decision gate: Day 30 is the final installation decision.

60-Day Guided

Learning, practice, correction, then broader execution

Best for newer leaders, developing teams, inconsistent records, limited system experience, or operations that need repetition between major steps.

  • Days 1–10: Learn + measure
  • Days 11–20: Define + prepare
  • Days 21–30: Train + practice
  • Day 30: Midpoint correction gate
  • Days 31–46: Guided live execution
  • Days 47–54: Stress-test
  • Days 55–60: Verify + hold

Decision gates: Day 30 is midpoint correction. Day 60 is the final installation decision.

Guided-path rule: If nothing meaningful happens between the major events, the plan has merely been stretched. A true 60-Day Guided rollout earns its extra time through better learning, coaching, repetition, correction, broader adoption, and verification.

The Start Here glossary explains common Gravity terms such as baseline, variance, evidence, corrective action, verification, root cause, escalation, and system owner. Gravity should use ordinary restaurant language whenever it says the same thing clearly.

Examples: “ad hoc” and “PRN” should be replaced with as needed in normal operating language.
