Closing should leave the restaurant safe, secure, reconciled, clean, stocked, and understandable to the next manager. A locked door does not prove the shift was properly closed.
Close the guest and service work
- Resolve or document open guest complaints, refunds, comps, lost property, reservations, catering, takeout, and follow-up promises.
- Confirm dining, bar, kitchen, takeout, and support stations completed their approved close.
- Record service failures or unusual events that the next leader must understand.
Reconcile cash and system controls
Complete required drawer, deposit, safe, credit-card, void, comp, refund, gift-card, tip, and POS closeout controls. Investigate material exceptions instead of carrying an unexplained difference forward. Protect separation of duties and required approvals.
Control product, waste, and tomorrow’s readiness
- Record waste, spills, comps, transfers, shortages, prep concerns, 86 items, inventory exceptions, and vendor needs.
- Verify cooling, storage, labels, dates, rotation, high-cost product security, and approved discard decisions.
- Prepare or clearly hand off tomorrow’s production, ordering, receiving, and readiness needs.
Verify cleaning and equipment shutdown
Inspect the critical cleaning result rather than accepting a verbal “done.” Confirm food-contact surfaces, dish operations, floors, restrooms, trash, chemicals, pest prevention, equipment shutdown, refrigeration, gas or electrical controls, and any equipment left intentionally operating.
Secure the facility
Confirm doors, windows, restricted areas, keys, alarms, exterior checks, employee departure, lighting, utilities, and any closing-person safety procedure. Escalate conditions that make normal close unsafe.
Write the manager record
Record meaningful issues, decisions, exceptions, follow-up, and the handoff. Every manager beginning or working the next shift should read and sign or acknowledge the Manager Log. Connect unresolved material items to the appropriate Manager Control Report or corrective-action process.
Do not hide incomplete work
If a task cannot be completed, state what remains, why, the temporary control, owner, and required deadline. “Morning can finish it” is not a handoff unless morning understands and accepts the work.
