Closing is not simply cleaning after the last ticket. A controlled kitchen close protects product, cash tied up in inventory, equipment, food-safety records, the opening crew, and tomorrow’s service.
Finish production before breaking the line down
Coordinate with the manager and FOH so stations are not dismantled while guests can still order. Reduce intelligently as demand falls, but retain enough safe, usable capacity to serve the final guests to the same standard.
Account for product
Cool, label, date, store, discard, or transfer product according to the restaurant’s verified standards. Record meaningful waste and identify shortages that the opener needs to know about. Do not hide poor production decisions by simply throwing product away without a reason.
Restore pars and identify tomorrow’s needs
Record low items, prep shortages, unavailable products, delivery issues, and unusual demand. The closer has information the opener cannot reconstruct from memory the next morning. Put that information into the manager log or prep handoff.
Clean in a controlled sequence
Use approved procedures for food-contact surfaces, equipment, floors, drains, storage, trash, dish areas, and chemicals. Keep cleaning instructions tied to current product labels, manufacturer instructions, and the restaurant’s sanitation program.
Shut down equipment intentionally
Identify what is turned off, what remains on, what requires a final check, and what has an overnight setting or special shutdown process. Report equipment that is damaged, leaking, overheating, making unusual noise, or otherwise unsafe rather than leaving the next shift to discover it.
Protect clean and dirty flow
Finish warewashing, allow approved air drying, return clean items to protected storage, remove trash, and avoid recontaminating completed areas while the last work is being finished.
